Nick Filsell
Nick Filsell is an Adelaide Hills chef, triathlete and old-school raver who brings people together through food, wine and music. His career spans more than 30 years, from his first Hills kitchen to Michelin-starred restaurants in the UK. Back in Adelaide, he helped open Jamie’s Italian and Aurora, and co-founded Lost in a Forest with Taras Ochota and Charlie Lawrence. Set inside Uraidla’s former St Stephen’s church, its wood-fired pizzas, natural wines and music made it a much-loved gathering place. Now head chef at Sidewood Estate in Hahndorf, Nick puts regional produce and wood-fired cooking at the centre of his work. With Maestro D, he presents We Are Family, bringing shared food, local wine and disco and house music together in an all-ages garden-party setting. Away from the kitchen and dancefloor, he takes on endurance challenges, including the Cairns Ironman 70.3. Across these different parts of his life, the thread is the same: company, a shared experience and plenty of energy.
