Hollondaise aka Henry Holland

Hollondaise is the DJ alias of Henry Holland, an Adelaide hospitality figure whose music selections sit alongside a long connection with the city’s bar and dining scene. Holland is part of the team behind Clever Little Tailor, Pink Moon Saloon and Longplay Bistro, where music and vinyl are built into the venue’s identity. His record taste moves through jazz, funk, soul, boogie and left-field electronic music, favouring warm, groove-led selections over obvious peak-time choices. In 2026 he was booked by Tasting Australia for Big Grape Energy, bringing that approach to the festival’s wine-focused late-night party, while the Hollondaise alias also appears on Adelaide underground bills such as Worm Hole, including a B2B with Rhyziel. His public DJ footprint is still relatively small, but the project connects Holland’s record collecting and hospitality background with a looser club and party setting, moving comfortably between listening-room selections and dancefloor material.
